Refreshing limes for breakfast, lunch and dinner!

We have over 90 citrus trees, so for more than 6 months of the year you can pick and enjoy delicious fresh fruit as you stroll through the gardens. We’ve just picked another batch of limes and have just made some zesty lime marmalade and chutney. 

Here are the recipes for great tasting limes preserves. Pick your own fruit while you stay and make these at home! The limes are chemical free and free for guests to pick.

Lime Marmalade

Ingredients:
1kg of limes, 1 kg of sugar

1. Quarter the limes and separate the flesh

2. Slice the rind into thick strips, put into a saucepan and cover with water. Boil until tender (approximately 20 minutes)

3. Put the flesh into a large saucepan and crush so it is a pulp and add the sugar

4. Drain the rind and add to the pulp

5. Heat gently, after 30 minutes boiling place into clean jars and seal while hot.

Fantastic on your toast for breakfast, the taste will make you smile!

Lime Chutney

ingredients:
1 kg of limes, 1 kg of brown sugar, 7 grams dried chilli seeds, 8 grams of turmeric, 6 grams mustard seeds, pinch of salt.

1. Quarter the limes and separate the flesh

2. Slice the quartered rind into half, put into a saucepan and cover with water. Boil until tender (approximately 20 minutes)
3. Put the flesh into a large saucepan and crush so it is a pulp and add the brown sugar

4. Drain the rind and add to the pulp

5. Put a little oil in a frying pan and gently heat the spices (3-4 minutes), be sure not to burn. Add to the saucepan

6. Heat gently, after 30 minutes boiling place into clean jars and seal while hot.

Terrific with cheese, cold meats and Indian curries (the curries are in your cottages’ freezer)
